Three Recipes That Have Gotten Me Through Quarantine

By: Daysia Tolentino

Staying at home has turned me into a bit of a stress baker, but honestly, it’s been keeping me sane! As a person who normally doesn’t have the time (or the skill) to bake at all, I’ve found joy and comfort in making easy treats. I’ve rounded up a few of my favorite recipes that I’ve made during quarantine. They’re super simple and don’t require a ton of difficult ingredients. I hope you enjoy them as much as I have!

Monkey Bread

This monkey bread recipe was so so so easy to make. All you really need to do is cut up some Pillsbury Grands and coat them in butter and cinnamon sugar. Usually, you’d make monkey bread in a Bundt pan, but if you’re like me and you don’t have one, you can just line them up in a cast iron skillet and eat them from the pan.

The recipe calls for cherries, but you can really substitute them for whatever berries you want. I tend to go for blueberries or raspberries! It has a custardy texture when it’s done, so don’t be surprised if the dough looks a little rubbery.

Cheddar Chive Sourdough Biscuits

This one is for all the people who have spent this quarantine making sourdough starter (or who are just beginning to do so). I decided to try making these because my boyfriend was making some starter, and I wanted to try baking with it. You can use the discard to make these (which is what I did)! These biscuits are great for making breakfast sandwiches and taste great with soup!
